Verdict

Tobón's work at San Pablo Ameyaltepec covers more agaves than most Oaxacan palenques and this pizorra is a fine example of what San Pablo does best. Twelve consensus reviews at 4.0 matches our read. Compared with the same palenque's papalome, this is drier and more austere. Buy it if you're completing a Puebla flight; Tobón's pichomel and papalote releases still carry more fireworks.

Pizorra is a word you'll see once, maybe twice – make it count

Tasting notes

Nose: Green stone walks in first. Then dry herb, cooked agave

Palate: Pizorra is a small Puebla agave that rarely gets single-plant treatment; at 48.4% Tobón gives it enough proof to show, a drier, more mineral pour than the other Puebla rarities, with a slightly spicy mid-palate

Finish: Mineral, dry, long

The bottom line

Buy it. A Puebla rarity worth tasting once
