5 Sentidos Bicuixe Verde / Bicuixe
Bicuishe verde plus bicuishe, José García at the helm – a thin slice of karwinskii geekery
Score: 4.0/5 agaves
- Producer: 5 Sentidos
- Maestro: José Garcia
- Region: San Isidro Guishe, Oaxaca
- Agave: Bicuishe, Bicuixe Verde
- ABV: 48.3%
- Price: $68 ($$)
Verdict
This is connoisseur bait in the good sense: a release aimed at drinkers already past the Banhez-and-Vida stage who want to taste inside a single agave species. The liquid itself is clean and specific. Compared with 5 Sentidos' straight bicuishe from Atenogenes García, this is brighter and greener; you're paying for a fine distinction, but the distinction is real.
One agave, two subvariants – the kind of distinction that becomes obvious once you pour them side by side
Tasting notes
Nose: Green stone, wet grass, cooked pineapple
Palate: The verde variant brings a slightly sharper green-herb edge to the standard bicuishe base; 48.3% holds the structure without pushing heat. Less mineral-driven than García's cousin Atenogenes at San Isidro, more vegetal
Finish: Herbaceous, clean – long
The bottom line
Pick up if you're building a bicuishe flight; otherwise the straight Atenogenes version does the job
