Verdict
Tío Tello's cuishe for 5 Sentidos is an exercise in confident restraint, nothing showy, nothing flat, nothing pushed past where the agave wants to go. The single-maestro bottling shows why the boutique-import model matters: at 45% from another producer this cuishe would read as undersold; at 45% from Tío Tello it comes through as deliberate. Consensus 4.2 is fair.
Cuishe done with this much restraint is rare in a category that often over-reaches
Tasting notes
Nose: Wet stone with damp leaf, a faint caramel, crushed mint
Palate: Lean and mineral. At 45%, with the cuishe's herbal signature precisely rendered, the proof is low for the agave on paper but Tío Tello's production compensates with discipline rather than structural muscle
Finish: Long, cooling, drying, with a slow green-herb echo
The bottom line
A serious cuishe. Works best at room temperature, in a copita, after dinner
