Verdict
A producer's statement bottle that rewards study more than pure drinking pleasure. Seven agaves (azul, bicuishe, espadín, madrecuishe, tepextate, tobalá, and one more) in one bottle is a composition ceiling; even 5 Sentidos's production discipline can't prevent some agaves from getting crowded out at 51.9%. The technical feat is real, the educational value is real, the standalone drinking experience is a shade muddier than the range's two- and three-agave ensambles. Consensus 4.6 is a touch generous; we score it 4.
Seven agaves is category ambition made visible
Tasting notes
Nose: Layered – green herb, wildflower, cooked agave, mineral damp, warm stone
Palate: Complex. At 51.9%, but the seven agaves don't all quite get space. A remarkable technical feat with a few muddy notes
Finish: Layered, slightly chaotic
The bottom line
For collectors and category students
