Capón espadín is one of the category's more interesting technical arguments – cut the quiote before the plant flowers, let the sugars concentrate in the piña, distill without shortcuts. The result is espadín that outperforms most tobalás at comparable money. 5 Sentidos's capón bottlings are the category's cleanest demonstrations of the technique, and at 48.1% the concentrated sugars carry their own structural weight without reading as sweet. Consensus 3.8 is accurate.
