Verdict
Ten consensus reviews at 4.2 aligns with a bottle that's quietly one of 5 Sentidos' best Puebla expressions. Pichomel is endangered by over-harvest and Ramirez and Arriaga are among the few producers cultivating it responsibly. Compared with a Jolgorio tepextate or a Mezcalosfera wild release, this is softer and more floral, but no less particular.
Pichomel is Puebla's answer to tobalá, and Ramirez and Arriaga speak it fluent
Tasting notes
Nose: Wildflower with ripe pear, green mint
Palate: Pichomel's aromatic range is unusually wide and at 46.2% this release captures most of it – floral lift, dry mineral base, a creamy mid-palate that's rare for Puebla
Finish: Long, floral, flinty
The bottom line
Chase it down. The pichomel reference in the 5 Sentidos catalog
