Guerrero pechuga is the category's quieter pechuga story – drier, more mineral, less marketed than the Oaxacan version most drinkers learn the format on. Don Refugio's hand keeps the seasoning controlled and the cupreata character legible underneath. Aguerrido is doing the work of extending the pechuga conversation past Oaxaca; buy it to hold that ground.
