Verdict

Guerrero pechuga is the category's quieter pechuga story – drier, more mineral, less marketed than the Oaxacan version most drinkers learn the format on. Don Refugio's hand keeps the seasoning controlled and the cupreata character legible underneath. Aguerrido is doing the work of extending the pechuga conversation past Oaxaca; buy it to hold that ground.

Guerrero pechuga is a regional specialty worth tracking

Tasting notes

Nose: Warm spice walks in first. Then green herb, faint cured meat, cooked cupreata and a trace of dried fruit

Palate: Savory at 45.9% – the pechuga run over a Guerrero cupreata base rather than the more common Oaxacan espadín

Finish: Warm, savory, with a slow mineral fade – long

The bottom line

A respectable Aguerrido
