Don Cosme Cirilo's San Baltazar anniversary is a three-agave ensamble where each voice – tobalá, mexicanito, espadín – keeps its shape against the other two. San Baltazar runs more mineral than the Matatlán villages next door, which gives the composition its regional signature.
