Verdict
Amateco is a quieter producer whose high-proof releases reward seeking out. 60% jabalí is a declarative proof for a difficult agave, jabalí at still-strength amplifies every production decision, and García-Aquino's hand delivers the density without tipping into heat. The producer's catalog doesn't get the distribution that Mal Bien or Rey Campero receive, which keeps their serious work priced below where quality alone would put it. Community consensus aligns. A serious Guerrero-adjacent jabalí.
High-proof jabalí is the agave at its structural bound
Tasting notes
Nose: Hot stone, then green pepper, herbal density
Palate: Electric and concentrated, jabalí at 60% is serious category work
Finish: Endless. Warming, mineral, drying
The bottom line
A serious Guerrero-adjacent jabalí
