Verdict

Most Ibérico pechugas let the famous ham do all the talking; Bozal's is the rare version where the ensamble base carries the story and the ham plays supporting role. The three-agave complexity is what makes the format worth paying for. Buy it over Del Maguey Ibérico, the ensamble is more interesting than the solo espadín base Del Maguey uses.

The ham-distilled pechuga category keeps attracting producers

Tasting notes

Nose: Cured meat with faint smoke, warm spice, dry herb and a trace of dried fruit

Palate: Savory and layered at 47%. The pechuga-style treatment on a three-agave (espadín-mexicano-tobaziche) base with Spanish Ibérico ham in the still

Finish: Warm, savory, with a slow spice fade

The bottom line

Del Maguey's Ibérico is more distinctive for similar money
