Verdict
Bozal's Guerrero pechuga is the bottle to reach for when the Oaxacan category fatigue sets in. The state's character is distinctive, mineral, less smoky, stranger – and the pechuga treatment doesn't smother it. Not cheap, but earned.
Proof that pechuga is a method, not a region
Tasting notes
Nose: Warm stone, cured meat, ripe plum, roasted nut
Palate: Denser than most Oaxacan pechugas, the Guerrero base has more iron and less sweetness, and the pechuga run extends it into savory territory
Finish: Warming, meaty. Long
The bottom line
A worthwhile argument for mezcal beyond Oaxaca
