Verdict
Salmiana is a different conversation from angustifolia, and Cabalgadura's 55% makes that point structurally instead of decoratively. Ahualulco production preserves the salmiana specificity without softening it for broader drinkability, the agave at full volume. Buy it alongside Derrumbes SLP to hear salmiana at two different proof points from different producers; the register is unmistakable.

Nose: Fresh asparagus, warm earth, dry herb, mineral damp and a faint vegetal high note
Palate: Vegetal and sharp at 55%. Salmiana's distinctive vegetal character, the agave is a different species from angustifolia and reads nothing like Oaxacan mezcal, is amplified by the serious proof rather than softened
Finish: Herbal, cooling, with a slow vegetal fade, very long
