Heirloom azul at 70% drinks closer to a focused ingredient than a finished spirit – the Jalisco heirloom program becomes almost analytical at still-strength. For drinkers calibrated on high-proof work, this is a category education. For anyone else, start with Caballito Cerrero's standard azul; the puntas isn't the gateway.
