Verdict
Chato at 70% is a specialist's exercise in concentrated heirloom character – the drinker has to meet the agave on its own terms of concentration, and there's no casual way to pour the bottle. Caballito Cerrero is one of the only places chato exists at all, let alone at puntas strength. Hunt it if you're already calibrated on high proof; otherwise start with the standard chato.
Chato puntas is a test of the drinker's calibration
Tasting notes
Nose: Intense cooked agave, hot alcohol, citrus, warm stone and a trace of mineral damp
Palate: Singularly composed concentration at 70%. Chato puntas is a specialist's drink – the proof demands attention, and at this concentration the agave's character becomes almost medicinal in intensity
Finish: Endless. Warm, iron-tinged, with a slow herbal fade
The bottom line
Seventy-percent chato, experienced drinkers only
