Caballito Cerrero Chato Reposado
Reposado at 40% – even the heirloom chato can't escape the reposado problem

- Producer: Caballito Cerrero
- Region: Amatitan, Jalisco
- Agave: Chato
- ABV: 40%
- Price: $124 ($$$)
Verdict
Even Caballito Cerrero's aged chato runs into the aging-without-base problem at 40%. The heirloom Jalisco project's higher-proof bottles (the 55% Unicorn Chato, the puntas variants) demonstrate what the agave is capable of; the reposado at 40% sits on the other side of the proof floor where oak dominates a base that needed more. Consensus 3.3 is generous. Buy the 55% chato instead – aging rarely rescues chato and never at this proof.
Chato at 40% reposado is the project's weakest bottle
Tasting notes
Nose: Oak with cooked agave
Palate: The oak dominates at 40% – lower proof than the Caballito Cerrero's better bottles
Finish: Warm, oaky – medium
The bottom line
Buy the 55% chato. Skip the reposado
