Verdict
An education bottle for anyone who thinks they know what azul Weber tastes like. Heirloom azul – same species as tequila's base agave, grown and processed under pre-industrial conditions the industry abandoned, drinks more mineral, more specific, legibly older. Buy it alongside Caballito Cerrero's chato for the full heirloom-Jalisco lesson; the modern industry narrowed a conversation that used to be wider.
The heirloom-Jalisco tradition predates tequila as a brand category
Tasting notes
Nose: Cooked agave, citrus, mineral damp, warm earth and a faint floral undertone
Palate: Rich and lean at 55%. Heirloom azul is the same species as commercial tequila's base agave, but grown and processed under pre-industrial conditions the tequila industry abandoned decades ago
Finish: Cooling, river rock, with a slow citrus fade – very long
The bottom line
Buy alongside the Chato for comparison
