Verdict

Chato predates the modern tequila industry – a pre-industrial Jalisco heirloom that the commercial category erased in its narrowing toward azul Weber. Caballito Cerrero is one of the only producers bottling it. The flavor is unlike anything in the mezcal or tequila conversation: mineral, floral, aromatic, specific. Hunt it; defines the upper tier work that also happens to taste like the argument.

Chato is the Jalisco agave that rewrites assumptions

Tasting notes

Nose: Cooked agave with citrus peel, mineral depth

Palate: Exceptional at 55%. Chato is a pre-industrial Jalisco heirloom agave – the Caballito Cerrero project is one of the only producers bottling it commercially

Finish: Unending. Mineral, warm, drying, with a late cooling floral note

The bottom line

An heirloom almost no one bottles. Find it however you can
