Verdict
Chato predates the modern tequila industry – a pre-industrial Jalisco heirloom that the commercial category erased in its narrowing toward azul Weber. Caballito Cerrero is one of the only producers bottling it. The flavor is unlike anything in the mezcal or tequila conversation: mineral, floral, aromatic, specific. Hunt it; defines the upper tier work that also happens to taste like the argument.
