Zimatlán is a lesser-distributed Oaxaca village, and Catedral's espadín-mexicano ensamble at 47% delivers the region's slightly drier-than-Matatlán profile with clean production. The two-agave composition holds cleanly at this proof, the espadín provides structural spine and the mexicano adds vegetal-mineral complexity without either crowding the other.
