Verdict
A solid two-agave ensamble. Zimatlán is a lesser-distributed Oaxaca village, and Catedral's espadín-mexicano ensamble at 47% delivers the region's slightly drier-than-Matatlán profile with clean production. The two-agave composition holds cleanly at this proof, the espadín provides structural spine and the mexicano adds vegetal-mineral complexity without either crowding the other. Community average matches. A respectable mid-tier Catedral.
Catedral's ensambles are quietly competent
Tasting notes
Nose: Green note over cooked agave, herb, mineral damp
Palate: Structured, the two agaves integrate cleanly
Finish: Drying, limestone. Very long
The bottom line
A respectable mid-tier Catedral
