Ixtero amarillo is another Jalisco vocabulary word Chacolo is teaching one bottle at a time. At 48.5% the heritage variety gets the proof it deserves – most producers would undersell at 45% and lose the structural register. Chacolo doesn't. Buy it next to the cimarrón for the single-producer Jalisco education.
