Verdict

Ixtero amarillo is another Jalisco vocabulary word Chacolo is teaching one bottle at a time. At 48.5% the heritage variety gets the proof it deserves – most producers would undersell at 45% and lose the structural register. Chacolo doesn't. Buy it next to the cimarrón for the single-producer Jalisco education.

Chacolo's single-agave releases are Jalisco lessons

Tasting notes

Nose: Pine, warm earth

Palate: Lean at 48.5%. Ixtero amarillo is another vocabulary agave in the Jalisco heirloom range – the kind of varietal that only appears in specialty single-variety bottles rather than in commercial ensambles

Finish: Cooling, with a slow herb fade. Stays very long
