Verdict

This is the bottle you buy if you're already deep in Tobón's catalog and completing the set. As a standalone it's honest – no cheats, no overproof stunt, but Delfino's papalote and pizorra releases are simply more alive. When 5 Sentidos rations the Mixteca editions, pass the azul unless you've already tried his other work. The Mezcalosfera single-producer runs are a useful comparison point for similarly priced bottles.

A good palenque doing a competent bottle, not its best

Tasting notes

Nose: Dry grass, green banana, cooked agave, a faint cinnamon lift

Palate: Tobón's palenque in San Pablo Ameyaltepec does well with wilder magueys; on azul the 47.5% feels fine but the character is less particular – a well-made version of a middle-of-the-road agave

Finish: Slightly bitter, clean

The bottom line

Fine, just not Tobón's best. Reach for his pichomel or papalote first
