Refugio Calzada Hernandez works in Chilapa and the Guerrerense pechuga concept is worth trying, but this release runs a shade muddier than the best pechugas – the Luis Enrique Juarez mole negro pechuga in the same catalog is a better argument for creative-format pechugas. Compared with that, this feels less disciplined.

Nose: Roasted poultry with cooked agave, faint spice
Palate: The Guerrerense pechuga format uses regional fruits and aromatics in place of the more standard Oaxacan set; at 47.9% the result is cleaner than many pechugas but the base liquid feels slightly overwhelmed by the infusion
