Verdict

Two consensus ratings at 3.5 tracks with what we'd call this edition: legitimate but noticeably less vivid than the preceding releases. The lower proof is the likely culprit – pizorra is already a restrained agave, and dropping below 47% pulls it into quiet territory. If you're deep into the Mixteca series you'll want it for completeness; otherwise look for earlier pizorra editions. A Del Maguey single-village release at similar price point would feel similarly pleasant and similarly contained.

When a series drops proof, the series almost always drops character

Tasting notes

Nose: Dry stone, herb, cooked agave, faint vegetal top

Palate: At 46.7%, this edition runs 1.7 points below the original pizorra's proof and you can feel it in the mid-palate – the structure remains but the aromatic lift is dulled. Clean work, modest result

Finish: Dry, mineral. Medium

The bottom line

A pass this edition; earlier Tobón pizorra runs are sharper
