Verdict
Jabalí under 50% tends to flatten; this one doesn't. The wild, almost-sour pulque top-note that marks convallis is present and uncompromised, and Cómplice deserves credit for shipping it at honest proof. Buy this over Del Maguey's Wild Jabalí if you want less polish and more agave. Strange on purpose.
Jabalí this honest is worth paying to meet
Tasting notes
Nose: Crushed herbs, then stone fruit, a sharp lactic funk, hot mineral
Palate: Jabalí is notoriously obstinate in the still – Epigmenio Martínez Pérez tames it without dulling it, and 49.5% lets the weird, lactic, slightly electric character of convallis come through
Finish: Warming, strange. Stays long
The bottom line
Worth the hunt; jabalí bottles this committed are rare
