Verdict

Rancho Viejo's tobalá runs drier and more mineral than the tobalás drinkers usually learn on – which is the whole point of a Comunidad numbered release: terroir specificity the broader market flattens. Buy it next to a Del Maguey tobalá to hear how much village variation the commercial tier erases.

Tasting notes

Nose: Wildflower, then sweet smoke, ripe citrus, mineral damp and a faint honey high note

Palate: Aromatic at 48.1%. Rancho Viejo's village profile shows in the tobalá's specific register – slightly drier and more wet slate than tobalás from other Oaxacan villages, with the producer's hand legible throughout

Finish: Floral, drying, with a slow honey fade – very long
