Rancho Viejo's tobalá runs drier and more mineral than the tobalás drinkers usually learn on – which is the whole point of a Comunidad numbered release: terroir specificity the broader market flattens. Buy it next to a Del Maguey tobalá to hear how much village variation the commercial tier erases.
