Most capón bottles are espadín; Creador applying the technique to mexicano is the unusual decision that makes the bottle worth seeking. The capón harvest concentrates the mexicano's sugars enough to give the agave real wild-agave density, and Mixtepec production keeps the regional reads cleanly. Buy it for the technique applied in an unexpected direction.

Palate: Dense. At 48.5%, capón harvest (quiote cut before flowering) on mexicano. The concentration technique usually appears with espadín or wild agaves; applying it to mexicano produces a denser, more structured bottle than standard mexicano reaches
