Verdict
Ancestral-certified espadín is rarer than it should be, the certification represents a production commitment (clay pot, wood-fired, no stainless anywhere) most espadín makers choose not to make because it doesn't scale. Buy it when you see it; the ancestral label is real production commitment here, not marketing decoration.

Tasting notes
Nose: Cooked agave – then hot clay, warm earth and a faint mineral note
Palate: Dense at 48% – ancestral methods (clay still, tahona, wild yeast) produce a textural weight that copper-still espadín can't quite replicate
Finish: Drying, chalky, with a slow clay-earth fade – very long
The bottom line
A category-serious pick
