Verdict

Tobalá in a single-maestro frame usually wins and this one does – Everardo at 47.5% is giving potatorum room to express beyond the standard honey-pear gloss. Reach for this over Del Maguey's Wild Papalome if you want named provenance and less polish. Cuentacuentos' whole model is paying off on this shelf.

A tobalá that remembers it's a wild agave

Tasting notes

Nose: Honeysuckle, then stone fruit, wet stone, dried chamomile

Palate: 47.5% ABV lifts the tobalá's floral sweetness without letting it go sugary – Everardo Garcia Salvador keeps the texture mineral-forward

Finish: Medium-long, dry, faintly spicy

The bottom line

A thoughtful tobalá to buy when the Everardo name catches your eye
