Verdict
Belato is the sort of wild-agave release that reminds you how much of mezcal's vocabulary is still being written. Agustin Guendulain Maya's work at 50% ABV is deeply specific – pine, bone-dry, unexpectedly cooling. Hunt this down before the producer gets named-optioned by a bigger label. Cuish is giving us access to bottles Real Minero would charge double for.
A bottle that makes you rearrange your shelf
Tasting notes
Nose: Pine resin, wet moss, crushed black pepper, a thread of menthol
Palate: 50% ABV carries a rare unidentified species from San Luis Amatlan – Agustin Guendulain Maya's hand is light and the agave is loud, vegetal, and unusual
Finish: Cool, slightly medicinal
The bottom line
Chase it down. Bottles like this don't stay quiet
