Verdict
Salmiana's signature bitter undertow confuses drinkers raised on southern espadín, and Antonio Trujano's puya leans into it rather than softening it. Buy this if you've enjoyed Derrumbes' San Luis Potosí work and want to stretch further. Puya is a less-exported salmiana subspecies and the catalog thanks Cuish for shipping it. Bitter, long, deliberate.
Salmiana is an acquired taste; this is the bottle that earns the acquisition
Tasting notes
Nose: Dried herb with black pepper, a dusty floral note
Palate: Salmiana drinks differently from southern agaves – Antonio Trujano's puya at 49% is dry, bitter-edged, and earthy
Finish: Long, mineral, bitter-dry
The bottom line
For salmiana fans; skip if you prefer sweet
