Dainzu Cuishe
Matatlán cuishe – ABV undisclosed, which is itself a tell

- Producer: Dainzu Mezcal

- Region: Santiago Matatlán, Oaxaca
- Agave: Cuishe
- Price: $55 ($$)
Verdict
Dainzu is working-class mezcal with named maestros but unpublished proofs, and that transparency gap matters. The cuishe from Leoncio and Octavia Santiago Hernandez is honest in method but opaque in label. Pass in favor of Cuish's single-maestro karwinskii bottles where the producer and the proof both get stated plainly. Disclosure is part of the value here.
A bottle whose ABV is a footnote – treat it like one
Tasting notes
Nose: Green celery with a light citrus snap
Palate: Leoncio and Octavia Santiago Hernandez work in Matatlán, the karwinskii reads decently though without a disclosed ABV the proof context stays guesswork
Finish: Clean, dry, medium
The bottom line
A pass; proof silence is itself a signal
