Verdict

San Pedro Taviche's four-agave ensamble is Del Maguey at its most ambitious, tepeztate, tobalá, cuishe and espadín at 49%, composed rather than assembled. Buy this when you want to see what single-village mezcal can do at catalog-peak. The two Hernandez maestros are doing real compositional work here. Del Maguey's best ensamble on American shelves.

A four-agave ensamble that sits as a chord, not a pile

Tasting notes

Nose: Bell pepper, then roasted agave, honey, cracked stone

Palate: Espadín, karwinskii, marmorata, potatorum, four agaves at 49% under Alberto Hernandez Luis and Juan Hernandez, each voice audible without confusion

Finish: Layered, dry. Long

The bottom line

Buy for what ensambles can be when they're composed
