Verdict

Del Maguey's Wild series is the part of the catalog that still justifies the brand, and the jabalí is proof. Miranda and Martinez Cruz's work preserves the convallis' difficult, semi-feral character – 45% is borderline but the agave pushes through. Buy this over any single-village espadín in the catalog if you want a genuine adventure. The brand at its least compromised.

Wild Jabalí earns the 'wild' on the label

Tasting notes

Nose: Wild herbs up front. Lactic snap, cracked pepper, cooked pineapple skin underneath

Palate: Jabalí at 45% from Leopoldino Miranda and Rogelio Martinez Cruz, the convallis' strange electric edge holds, though 45% is the minimum this agave wants

Finish: Warming, faintly sour. Stays long

The bottom line

Buy the Wild series. Vida territory this isn't
