Verdict
Where the Dark Matter version is experimental, Estrella Negra is traditional, the classic pechuga format at 46% from Carlos Mendez Blas. Buy this as the Diaz Brothers bottle to understand what their house style does with the conventional pechuga assignment. Banhez does pechuga cheaper; this does it with more proof honesty. Traditional but proofed correctly.
Pechuga done traditionally, cleanly, and at the proof where the agave shows
Tasting notes
Nose: Cooked agave with fruit peel
Palate: Carlos Mendez Blas's Matatlán pechuga at 46% with a more traditional basket, cleanly structured, the aromatics arriving without dominance
Finish: Warming, spiced. Long
The bottom line
The traditional Diaz Brothers pechuga, buy for the format lesson
