Dixeebe Tobala
A tobalá that's more serious than flashy
Score: 3.5/5 agaves

- Maestro: Valentin Cortes
- Region: Santiago Matatlán, Oaxaca
- Agave: Tobala
- ABV: 49.4%
- Price: $40–90 ($$)
Verdict
This is the Dixeebe bottle that asks you to slow down. The tobalá isn't the most aromatically exuberant in the category, it's doing something quieter, and the community's 3.7 underrates the quiet.
Restrained wild-agave mezcal is harder to make than showy wild-agave mezcal
Tasting notes
Nose: Honey, green herb, pine, a late-arriving citrus
Palate: Weightier and drier than Del Maguey's tobalá, closer to Mezcalosfera territory than Amaras. 49.4% earns the glass
Finish: Long, dry, mineral
The bottom line
A thoughtful tobalá. Drink it with attention
