Donaji Ensamble

Cuishe-espadín ensamble at 46%. A two-agave commercial ensamble at appropriate proof

Score: 3.0/5 agaves

Donaji Ensamble bottle
  • Producer: Donaji Mezcal
  • Maestro: Alberto Ortiz
  • Region: Miahuatlán, Oaxaca
  • Agave: Cuishe, Espadin
  • ABV: 46%

Verdict

Competent, not distinctive. Cuishe-espadín is the easiest two-agave ensamble to execute and one of the harder ones to make memorable – Donaji clears the first bar, doesn't reach for the second. Buy Banhez Ensamble instead; it costs less and delivers more on the same natural pairing.

A commercial ensamble that teaches the format at entry-level economics without elevating it

Tasting notes

Nose: A green top over cooked agave – pepper, faint mineral

Palate: Medium at 46%. The cuishe adds vegetal complexity and stone weight to the espadín base, though at a mid-tier level of elaboration – you can hear the cuishe clearly, but the ensamble never quite coheres into something greater than its parts

Finish: Dry, with a late chalky note – medium-long

The bottom line

Banhez Ensamble outperforms at similar money
