Verdict

Tobalá-espadín is the beginner ensamble because the two agaves share aromatic space comfortably – the pairing is easy on paper and easier to muddy than it looks. El Buho's production keeps both legible without letting either crowd the other out. Buy it as a clean entry into the ensamble format; the two-agave compositions are where producer judgment shows most visibly.

Tobalá-espadín is the beginner ensamble, and this is the version that teaches it properly

Tasting notes

Nose: Wildflower with warm citrus, mineral damp, a faint honey high note

Palate: Aromatic and balanced at 47%. The tobalá adds a floral lift and aromatic lightness; the espadín provides the structural spine and mid-palate weight

Finish: Floral, drying, with a slow limestone fade

The bottom line

A reliable pick for drinkers starting on ensambles
