Justina Ruiz Perez's work is worth seeking out, and Jolgorio's ancestral treatment of sierrudo is a strong argument for an agave that rarely gets single-variety treatment. Sierrudo sits in the karwinskii family between madrecuishe and cuishe in density; at 51.9% and under ancestral production the agave's austere mineral signature develops fully.
