Verdict

Justina Ruiz Perez's work is worth seeking out, and Jolgorio's ancestral treatment of sierrudo is a strong argument for an agave that rarely gets single-variety treatment. Sierrudo sits in the karwinskii family between madrecuishe and cuishe in density; at 51.9% and under ancestral production the agave's austere mineral signature develops fully. Community average matches. A rare bottle from an under-celebrated maestra. Small production; hard to find.

Sierrudo deserves more attention than it gets

Tasting notes

Nose: Wet moss, then cooked agave, faint smoke, dry herb

Palate: Lean and mineral at 51.9% – sierrudo's wild-karwinskii character with ancestral clay-still texture

Finish: Drying, cooling. Stays very long

The bottom line

A rare bottle worth the hunt
