Verdict
Jabalí is the agave that separates producers who can handle it from producers who shouldn't try, the plant foams, stalls, and punishes shortcuts. Jolgorio's is handled at the Lachigui palenque and at 50%, which is the only combination that reliably works. Buy it next to Rey Campero's jabalí for the direct lesson in how two disciplined producers render the same difficult agave.
Jabalí at Jolgorio caliber
Tasting notes
Nose: Hot stone, green pepper, herbal density, faint cocoa
Palate: Complex and structural, jabalí's tricky production handled without compromise
Finish: Unending. Drying, mineral, cooling

Buy alongside Rey Campero's jabalí for a category comparison
