Verdict
The Jolgorio house restraint suits tobaziche the way it doesn't always suit louder agaves – the karwinskii sits quietly anyway, and the producer's discipline lets it stay that way instead of pushing it into theater. A tobaziche that respects what tobaziche is. Not the most exciting Jolgorio, but one of the most correct.
A clean tobaziche done at Jolgorio caliber
Tasting notes
Nose: Green pepper, wet stone, dry herb, mineral
Palate: Lean and herbal at ~48% – the tobaziche's vegetal character front and center
Finish: Very long, cooling, drying
The bottom line
A legitimate tobaziche pick
