Verdict
Entre Maguey is a young label worth watching, and Ediberto López's papalote is a clean introduction to it. Cupreata's stone-and-flower brightness comes through without the roast smothering it, and 47 percent keeps it easy to read. Pour it next to a Bozal cupreata; this one is less smoky and more floral, the better for it on a warm night.
