Commercial proof on a specialty agave is a specific kind of waste. San Luis Potosí salmiana can be spectacular (see Derrumbes for the correct version), but Estación Ipiña at 40% trades the agave's signature green snap for shelf-placement smoothness. Skip it and chase Derrumbes SLP instead.

Nose: Green bean, cooked agave, light pepper, faint citrus

Palate: Salmiana's prairie-green bite deserves more proof than this gets. At 40% the aromatics are thin, the mid-palate washed out, the finish evaporated before it arrives

Finish: Watery, herbal, short
