Verdict
Jabalí is the agave that punishes low proof – anything under 50% and the convallis lemon-pine character falls flat. Geü Beez clears that bar cleanly. If Real Minero jabalí is out of reach, this is the next stop, with a sharper edge than Rey Campero at the same agave.

Nose: Dried herbs, then black pepper, green mango, wet stone
Palate: Jabalí at <50% is a shadow of itself; 51% lets the convallis do what convallis does – tart, herbal, nervous with a savory weight. Crispin Garcia Mendez's version is concentrated, a little wild, mid-palate electric
Finish: Tart, mineral
