San Martinero from a refrescador still is a different agave altogether, denser, oilier, longer than the copper-distilled versions from Dixeebe or Cuentacuentos. Gozona makes the case that refrescador is the right still for karwinskii, full stop.

Nose: Wet slate up front. Dry melon, cucumber, yellow flowers underneath

Palate: 50% and refrescador give San Martinero a weight the agave rarely gets, the karwinskii mineral backbone up front, cool vegetal through the mid, a long saline glide

Finish: Mineral, faintly floral, very long
