Ensamble that doesn't need to shout to make its point. Güey's cuishe-espadín is an honest San Dionisio pour – 42% trades some length for approachability, but the balance is right. Close in spirit to the Banhez ensamble, with a lighter bill. Buy as an everyday ensamble.

Nose: Cucumber walks in first. Then cooked agave, cut grass, wet stone
Palate: 42% is conservative but legible; the cuishe's mineral lift balances the espadín's cooked-sweet body. Eleuterio Garcia Martinez keeps everything in focus
