Oaxacan cucharillo – dasylirion territory south of the usual border

Verdict
A Miahuatlán sotol-cousin, category confusion as category education. Emanuel Ramos does Gusto Histórico a service by delivering it cleanly; there isn't much comparable on shelves. Buy as a companion pour to Fabriquero and Flor del Desierto for the dasylirion set.

Tasting notes
Nose: Pine, then wet stone, green tea
Palate: Cucharillo is related to sotol rather than agave; Emanuel Ramos's Miahuatlán version has a pine-and-mineral register distinctly different from the bottle's agave neighbors. 48.5% holds the aromatics up
Finish: Herbal, chalky, long
