This is the Gusto Histórico bottle people line up for, and it earns the wait. Natalia Sánchez is a genuinely gifted distiller, and her tepextate does what only a handful in the category manage – it reads as flower and stone at once, with none of the bitter green-wood note that plagues underpowered versions. Hunt it. Pair with the Puntas below it for an education.

Tasting notes
Nose: White flower, then green peppercorn, wet limestone, crushed mint stem
Palate: 48.4% is the sweet spot – the marmorata's floral-mineral top end arrives intact, refrescador coils keep the mid-palate lifted, and there's a savory depth underneath that most tepextates never find
Finish: Cool, floral – very long
