Verdict
Ignacio Juárez gets less airtime than Natalia Sánchez or Victor Ramos, but this tobalá says he shouldn't. It's the bottle we reach for when we want tobalá to behave like tobalá – floral, cool, structured, instead of showing off. Sits alongside Lalocura's and Real Minero's tobalás in our working reference set, at a more reachable price than either.
A tobalá that rewards the second glass more than the first
Tasting notes
Nose: Honey, wildflower, green melon rind, cool stone
Palate: 48% – a balanced, floral tobalá with real mid-palate weight from Juárez's copper pot, where the sweetness never tips into candy and the mineral line stays present throughout
Finish: Cool, lingering floral – long
The bottom line
Take it if you see it – it moves fast
