Verdict

Eusebio Santos isn't a name most US drinkers know yet, and this bottle is part of why he should be. The tobalá-bicuishe pairing is one of the oldest combinations in Miahuatlán, and Santos's copper version shows you why it survived, each agave fixes something missing in the other. Sits comfortably next to the best Rey Campero ensambles in our experience.

Tasting notes

Nose: Wildflower, then woody stem, green apple, cool stone

Palate: 48.2% – the bicuishe's waxy karwinskii profile gives the tobalá a structural spine it rarely has in solo bottlings, and the two agaves sit in genuine dialogue rather than competition

Finish: Herbal, mineral, long
