Verdict
Guanajuato salmiana is a sleepy corner of the DO, and Hacienda Vergel de Guadalupe is one of the few producers making a serious case for it. Dry, herbal, mineral – a bottle that rewards a drinker who's already happy with Durango cenizo. Sits in the same regional-education lane as Derrumbes's Zacatecas or the Bañuelos bottles above. Track it if you're building a broad state-by-state shelf.
Guanajuato mezcal that refuses to pretend it's Oaxacan
Tasting notes
Nose: Dry grass with limestone, wild mint
Palate: Proof unlisted but the density suggests high-40s – Alejandro González Anaya has pulled a dense, dry, grassy salmiana from San Luis de la Paz that tastes more like north-Mexico scrubland than Oaxacan sweetness
Finish: Dry, mineral – long
The bottom line
The pick for regional completeness and quality
