Guanajuato salmiana is a sleepy corner of the DO, and Hacienda Vergel de Guadalupe is one of the few producers making a serious case for it. Dry, herbal, mineral – a bottle that rewards a drinker who's already happy with Durango cenizo. Sits in the same regional-education lane as Derrumbes's Zacatecas or the Bañuelos bottles above.
