Verdict
Jaral de Berrio is to Guanajuato what 400 Conejos is to Oaxaca, commercial, under-proofed, engineered for price-point shelves rather than drinkers. The Hacienda Vergel salmiana above shows what Guanajuato can actually do. Pass in favor of that, or any Derrumbes/Mezcalosfera regional release. Guanajuato deserves better representation than this.
